Coconut oil is an edible oil extracted from the kernel or meat of matured coconuts harvested from the coconut palm tree (Cocos nucifera).

Coconut oil is rich in lauric acid, which is known for being antiviral and antibacterial. Its unique combination of fatty acids can have profound positive effects on health.

Coconut oil received bad publicity, at one time because of its high level of saturated fat. However, modern science has shown that not all saturated fats are equal in nutritional value and the fatty acids in coconut oil, the medium chain triglycerides, do not raise serum cholesterol or contribute to heart disease like the long
chain triglycerides found in seed oils.

Research studies in both humans and rats has revealed that coconut oil improves important risk factors like Total, LDL and HDL cholesterol, which may translate to a reduced risk of heart disease.

Coconut oil, like all fats is a blend of fatty acids containing an unusual blend of short and medium chain fatty acids, primarily lauric (44%) and myristic (16.8%) acids. This is an unusual composition that may offer some amazing health benefits.

Most of the fatty acids in our modern diets are so-called long-chain fatty acids, but the medium-chain fatty acids in coconut oil are metabolized differently. They go straight to the liver from the digestive tract, where they are used as a quick source energy or turned into so-called ketone bodies, which can
have therapeutic effects on brain disorders like epilepsy and Alzheimer’s.

The main reason why coconut oil has gained traction as a super-food is because of it's  50% lauric acid content which is mostly of the medium-chain fatty acid variety.  Mother's breast milk is the only other food which contains as much natural luaric acid. The extremely high content of lauric acid boosts your immune system to fight viruses and ward off disease, and still manages to add a phenomenal taste to our favorite recipes.
